4 red tomatoes or 8 medium tomatoes
1,05 oz of butter
1,05 oz of flour
one tablespoon of tomato paste
salt and pepper
This recipe is a great do-ahead dish. The tomatoes souffle can be served as a first course for a dinner party or as a meal together with a simple salad.
Cut the “tops” of the tomatoes and scoop them, and inside them sprinkle a little salt, then place them on a plate to drain. Boil the contents of the tomatoes until the juice evaporates. Then take them off the flame and mix with flour. After you mix well so there is no flour, add both the contents of the toasted tomatoes and the tomato paste.This whole sauce, once again, prepare it. Preheat the oven, separate the egg whites and add the yolks to the tomato sauce, stirring vigorously. Next, beat the whites with a little salt and add them over the tomato sauce. With this composition, fill the toasted tomatoes, then put them in a greased butter bowl and place them in the oven at medium heat for 20- 25 minutes. Serve hot, as such or alongside a green lettuce.
