Spinach and chickpeas croquettes – a simple and quick recipe
7.05 oz of spinach
7.05 of chickpeas
1 small white onion
2 small cloves of garlic
1 tbsp of chopped parsley
2 tsp of curry powder
1-2 tbsp of olive oil
The recipe is very simple and quick. For this recipe use a tin of chickpeas.Wash the spinach in several waters, then boil it for 2-3 minutes in boiling water in which add 1 teaspoon full of salt. Drain the spinach very well and chop finely. Drain the chickpeas as well then leave it to drain well.
Put the spinach in the blender, add the beans, the chickpeas, the garlic and the onion peeled and cut into medium pieces, curry powder, salt and pepper to taste. Mix on medium speed until you get a composition.
Form the croquettes and wallow them in breadcrumbs.Put them in an oven tray with baking paper and sprinkle them with a little olive oil.
Bake them in the preheated oven at 180 ° C, 6-7 minutes per side.
