Spicy baked eggplants
Spicy baked eggplants – a luscious recipe
4 medium eggplants
1 tbsp of oregano
1/2 tsp of chili flakes
about 2 tsp of salt
1 tsp of pepper
4 tbsp of olive oil
Wash the eggplants and cut them in half lengthwise.
Crest the pulp of each half eggplant. Powder each eggplant with one quarter teaspoon of salt and let them rest for 30-45 minutes.After resting, squeeze, with great care the eggplant, so that you can eliminate the water left in them.
Buffer the area of the eggplant with absorbent kitchen paper and grease them with 1 teaspoon of olive oil.
Put baking paper in the tray and powder it, in places where you will place the eggplants with oregano, freshly ground pepper and chili flakes.
Place the eggplants, in the pan, and bake them in a preheated oven at 200 ° C for about 40 minutes or until softened uniform.
Remove from the pan and serve them with yoghurt sauce, vinaigrette or a little olive oil. They are delicious!
