Raw eggplant salad – a luscious salad
2 dehydrated eggplants and 1 fresh eggplant
1 tbsp of tahini
3,38 fl. oz of olive oil
1 big red onion
a little water
1 tbsp of lemon juice
This eggplant salad is quite different than the baked eggplant salad. It tastes delicious and it is easy to make.
Peel the eggplant and rub with a little oil and salt. You can also use soy sauce instead of salt. Then let them to dehydrate. You do not have to leave them for a long time, 4-5 hours is enough.
Mix the eggplant with the tahini, olive oil and water in the blender.Put oil and water little by little, as the composition requires. It’s best to try not to put a lot of water because it will become a watery composition. Mix well in the blender and then put them in a large bowl. There rub them with a wooden spoon and oil. Add the diced onion, coriander and lemon juice. You can add more lemon, depending on how much composition is and how you like the taste to be.
The taste is very close to baked eggplant salad, if not better.
