Raw cherry cake – a delicious cake

Ingredients:

10,58 oz of almonds

1,76 oz of cocoa butter

6 tbsp of agave syrup

1 pinch of Himalayan salt

1 vanilla pods

The layer of cherries

3,52 oz of cherries

The cherry cream

10,58 oz cashew

7,05 oz of cherry juice

6 tbsp of agave syrup

4 vanilla pods

3,52 oz of cocoa butter

Description:

A delicious raw cherry cake free from refined sugars. Simple to make, no baking required.

The chocolate crust 

Hydrated the almonds for 8 hours in spring water. Wash them and grind them finely. Melt cocoa butter in drier at 40 degrees Celsius. Add the remaining ingredients and mix them until complete homogenization. Pour into a culinary form and give them a few minutes to cool.

Layer the cherries

Put a layer of cherries, pitted, just over the crust.

Sour cream and vanilla

Moisturize the coconut and cashew for 4 hours in spring water. Wash and ground it very fine. Melt cocoa butter in drier (or bain-marie) at 40 degrees Celsius. Mix the cashew nut with the cherry juice, agave syrup, vanilla and salt in a blender until we get a very smooth cream, whipped cream consistency. Add the cocoa butter and mix well. Pour the sour cream in the freezer and leave for about 1 hour.
