Milanese eggs with tomatoes and cheese – a quick recipe
2 to 3 large eggs
3-4 medium tomatoes
1,76 oz – 2,11 oz of parmesan/cheese/feta
It’s a very simple recipe and accessible to anyone.The bottom of line is to be excellent,fast and perfect for the days when we do not have time or feel like cooking anything elaborate.
Fill in a saucepan with water and put to it boil. When water begins to boil, soak the tomatoes in water for about 30 seconds. Then take them out on a kitchen paper,peel and clean them.Chop them finely and put them to cook with a tablespoon of oil, about 5 minutes.
Add the grated Parmesan cheese/cheese or feta.
Mix it until it binds a bit and add the eggs. Mix it well and keep them on a low heat for about 3-4 minutes.
Serve with fresh tomatoes and grate the eggs with parmesan on top.
