Marinated mushrooms salad – a hearty salad
14,10 oz of white mushrooms
2/3 cup of olive oil
1/3 cup of red wine vinegar
2 tsp of Dijon mustard
1 tsp of sugar
7,05 oz of black olives
12 slices of eggplant
1 cup peeled of tomatoes
1 cup chopped of basil leaves
Fresh mushrooms are marinated in olive oil seasoned with mustard, sugar and salt. Try this salad and you will enjoy the freshness of the vegetables.
Place the oil, vinegar, mustard, sugar, salt and pepper in a jar with lid. Tighten the lid and shake it well.
Pour the dressing over mushrooms. Mix well, cover the mushrooms and let them marinate for 30 minutes, stirring from 10 to 10 minutes so that all the mushrooms marinate evenly.
Grill or brown the eggplant slices in the pan with a little oil.
After the mushrooms were marinated, add olives, eggplant, tomatoes and basil over them and mix. Add salt and pepper if needed.
