Celery soufflé – a delicious recipe
5,07 fl oz of milk
1 tbsp of flour
1 tbsp of butter or oil
1 tbsp of semolina
This souffle looks impressive and difficult to make but it is very easy to put together. Its light, soft texture also it is ideal for the soft food.
Boil in salted water the celery, in pieces. When it is soaked, pass through a sieve. Prepare a sauce from hot butter, flour and milk. Mix this sauce with the celery puree, bind with semolina, egg yolks, pepper, and eventually whipped egg whites. Pour the mixture into greased and floured shape with bread crumbs and bake at a slow fire.
