Beetroot salad with horseradish and pine nuts – a tasty recipe
2 pieces of beetroot
1 lemon – juice
1 tbsp of extra virgin olive oil
3.38 fl oz of spring water
1 tsp of cumin powder
1 tbsp of pine seeds
The horseradish and the pine nuts – are a classic combination brightened by the addition of beetroot.
Grate the horseradish, put it in a jar and cover it with water and salt.
Grate the beetroots, add oil, lemon juice, cumin powder and salt.
Take 2 tablespoons of horseradish and put in the salad, stirring gently. Add the pine nuts. The remaining horseradish refrigerate it and use it in other dishes.
Horseradish is a very special plant; located at the border between wild and domestic. What does this mean? That; on the one hand, it is very rich in nutrients; like cultivated vegetables; and on the other hand it has a totally out-of-common resistance, like weeds. And such a vital force; deposited in a single root; has therapeutic effects to measure.
Its scientific name is Armoracia rusticana; and is a very close relative of the cabbage and cauliflower but also of the mustard. Horseradish is used as a natural remedy since prehistory, as shown by the archaeological discoveries made in Europe.
