Amaranth roe – a delicious recipe
5,29 oz of cooked amaranth
3,52 oz of tomatoes
2,99 oz of lent mayonnaise
1-2 tbsp of lemon juice
a pinch of salt
Try this easy to make recipe and enjoy the texture of the amaranth with tomatoes, onions and mayonnaise.
Cook the amaranth (hydrated for several hours before boiling) and drain and mix with lent mayonnaise, finely chop the onion, and add the salt and lemon juice. Put a small quantity of mayonnaise, enough to change the color of the amaranth and to give a good taste , but not enough to completely change the taste.
It can be served on a slice of bread or slices or sticks of vegetables, such as cucumbers, peppers, zucchini.
